Theme Parks
Shenzhen has the most theme parks in China. The most popular being Windows of the World. This park is a great place to observe, somewhat, the Chinese perception of the outside world.
Most of the parks are located in the same area and so you could hit them all in one day if you are in a rush. Happy Valley is the second biggest park. Located just across the street, it is a mock Disney world, but worth a look.

This theme park's theme could be that of plagiarism. With guys dressed up in cartoon character outfits that are suspiciously Disneyish you may take a double take. It is a great place to take the kids tired of being dragged through temples though.
